Lentil Stew Preparation
- In a large pot, sauté the onion, carrots, and garlic until soft.
- Add the lentils, broth, thyme, cumin, salt, and pepper. Simmer for 30-40 minutes until lentils are tender.
Mashed Potatoes Preparation
- Meanwhile, boil the potatoes in salted water until soft. Drain and return to the pot.
- Mash the potatoes with butter and milk until creamy.
Serving
- Serve the lentil stew over a scoop of mashed potatoes, with crusty bread on the side if desired.
Notes
