Ingredients
  

For the Lentil Stew
  • 1 cup lentils any variety can be used
  • 4 cups vegetable broth or use water with flavor boost
  • 1 medium onion, diced adds depth of flavor
  • 2 medium carrots, diced for sweetness
  • 2 cloves garlic, minced enhances flavor
  • 1 teaspoon thyme fresh or dried
  • 1 teaspoon cumin for a warm flavor
  • to taste Salt and pepper for seasoning
For the Mashed Potatoes
  • 4 large potatoes, peeled and chopped Yukon Gold or Russet recommended
  • 1/4 cup butter can substitute with olive oil
  • 1/2 cup milk or plant-based alternative
For Serving
  • to taste Crusty bread optional but recommended

Method
 

Lentil Stew Preparation
  1. In a large pot, sauté the onion, carrots, and garlic until soft.
  2. Add the lentils, broth, thyme, cumin, salt, and pepper. Simmer for 30-40 minutes until lentils are tender.
Mashed Potatoes Preparation
  1. Meanwhile, boil the potatoes in salted water until soft. Drain and return to the pot.
  2. Mash the potatoes with butter and milk until creamy.
Serving
  1. Serve the lentil stew over a scoop of mashed potatoes, with crusty bread on the side if desired.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days. This dish freezes well; just thaw overnight in the fridge before reheating.
