Ingredients
  

For the Pizza Pockets
  • 1 package refrigerated pizza dough Use gluten-free if needed.
  • 1 cup shredded mozzarella cheese Feel free to swap for another cheese.
  • 1/2 cup sliced pepperoni Turkey pepperoni can be used for a lighter option.
  • 1/2 cup pizza sauce Extra for dipping.
  • 1 each egg For egg wash.
  • Italian seasoning Optional, for added flavor.
  • Flour For dusting the surface.

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. On a lightly floured surface, roll out the pizza dough and cut it into squares or circles.
  3. Place a spoonful of pizza sauce, a few slices of pepperoni, and a sprinkle of mozzarella cheese in the center of each dough piece.
  4. Fold the dough over to form pockets and press the edges to seal.
  5. Place the pockets on a baking sheet lined with parchment paper.
  6. Beat the egg and brush it over the tops of the pockets for a golden finish.
  7. Sprinkle with Italian seasoning if desired.
Baking
  1. Bake for 12-15 minutes or until golden brown.
  2. Serve warm with extra pizza sauce for dipping.

Notes

Make sure to keep an eye on them while they’re baking; the last thing you want is for them to over-brown. Store leftovers in an airtight container in the fridge for about three days.
