  • 4 pieces chicken breasts Substitute with chicken thighs for a juicier option.
  • 1 cup Honey BBQ sauce Use gluten-free BBQ sauce if needed.
For the Potatoes
  • 4 medium potatoes, diced Cut evenly for uniform cooking.
  • 1 cup shredded Parmesan cheese Feel free to use another cheese if desired.
  • 2 tablespoons minced garlic Fresh garlic is recommended.
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix the diced potatoes with olive oil, minced garlic, salt, and pepper. Spread them out on a baking sheet.
Cooking Potatoes
  1. Bake the potatoes for about 25-30 minutes, or until golden and tender.
Cooking Chicken
  1. Meanwhile, heat a grill or pan over medium-high heat. Brush the chicken breasts with Honey BBQ sauce and cook for about 6-7 minutes on each side, or until fully cooked.
Finishing Touches
  1. Remove the potatoes from the oven and sprinkle with Parmesan cheese. Return them to the oven for an additional 5 minutes until the cheese melts.
  2. Serve the chicken alongside the cheesy potatoes, garnished with fresh parsley if desired.

Notes

For extra flavor, consider marinating the chicken for a few hours before cooking. Best served with a fresh salad or steamed veggies.
