  • 1 pound Italian sausage Use ground Italian sausage, regular or turkey.
  • 2 pieces bell peppers (any color), sliced Any color bell peppers work.
  • 1 piece onion, sliced
  • 3 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (15 ounces) tomato sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups cooked pasta or rice (optional) Can use cooked rice for a gluten-free option.
  • to taste Grated Parmesan cheese (for serving)

Method
 

Preparation and Cooking
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, cook the Italian sausage over medium heat until browned, breaking it up as it cooks.
  3. Add in the sliced bell peppers, onion, and minced garlic. Sauté until the vegetables are softened, about 5-7 minutes.
  4. Stir in the diced tomatoes, tomato sauce, oregano, salt, and pepper, mixing it all together.
  5. If you’re adding cooked pasta or rice, mix it in until everything is well combined.
  6. Transfer the mixture into a baking dish and cover it with foil.
  7. Bake for 30 minutes, then remove the foil and bake for an additional 10 minutes to let the top get a little golden.
  8. Serve hot, topped with freshly grated Parmesan cheese.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. This casserole can also be frozen for up to 3 months. For a quick meal, consider using pre-cooked sausage or rotisserie chicken, and feel free to add extra veggies like mushrooms or spinach.
