Preparation and Cooking
- Preheat your oven to 375°F (190°C).
- In a large skillet, cook the Italian sausage over medium heat until browned, breaking it up as it cooks.
- Add in the sliced bell peppers, onion, and minced garlic. Sauté until the vegetables are softened, about 5-7 minutes.
- Stir in the diced tomatoes, tomato sauce, oregano, salt, and pepper, mixing it all together.
- If you’re adding cooked pasta or rice, mix it in until everything is well combined.
- Transfer the mixture into a baking dish and cover it with foil.
- Bake for 30 minutes, then remove the foil and bake for an additional 10 minutes to let the top get a little golden.
- Serve hot, topped with freshly grated Parmesan cheese.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 3 days. This casserole can also be frozen for up to 3 months. For a quick meal, consider using pre-cooked sausage or rotisserie chicken, and feel free to add extra veggies like mushrooms or spinach.
