Ingredients
  

Pasta and Bacon
  • 8 ounces macaroni pasta
  • 4 slices bacon cooked until crispy
Vegetables and Dairy
  • 1 cup jalapenos, chopped can adjust for heat
  • 2 cups shredded cheddar cheese can substitute with other types of cheese
  • 1 cup milk
  • 4 tablespoons butter for making the roux
  • 1/4 cup all-purpose flour to thicken the sauce
Seasonings
  • 1/2 teaspoon garlic powder
  • to taste Salt and pepper

Method
 

Preparation
  1. Cook the macaroni pasta according to package instructions; drain and set aside.
  2. In a skillet, cook the bacon until crispy; remove and crumble.
  3. In the same skillet, add chopped jalapenos and cook for 2-3 minutes, just until they soften.
Sauce Making
  1. In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute to create a roux.
  2. Gradually add milk, whisking until smooth.
  3. Stir in the cheese, garlic powder, salt, and pepper until melted and creamy.
Combining
  1. Combine cooked macaroni, jalapenos, crumbled bacon, and cheese sauce. Mix well and serve hot.

Notes

For leftovers, store in an airtight container in the refrigerator for up to 3 days, or freeze for up to 2 months. Reheat with a splash of milk to retain creaminess.
