Ingredients
  

Chicken & Veggies
  • 2 boneless skinless chicken breasts
  • 2 medium potatoes cubed
  • 1 cup baby carrots optional
Sauce Mix
  • 1 cup heavy cream
  • 0.5 cup chicken broth
  • 0.5 cup grated Parmesan cheese
  • 1 tbsp garlic minced
  • 1 tsp Italian seasoning
  • salt and pepper to taste
Finish
  • fresh parsley for garnish
  • extra Parmesan optional

Method
 

  1. Season chicken with salt and pepper.
  2. Place chicken, cubed potatoes, and baby carrots into the crockpot.
  3. Whisk together heavy cream, chicken broth, Parmesan, garlic, and Italian seasoning. Pour over chicken and vegetables.
  4. Cover and cook on Low for 6–7 hours or High for 3–4 hours, until chicken reaches 165°F and is tender.
  5. Gently stir the sauce. Garnish with parsley and extra Parmesan before serving.

Notes

Use Yukon Gold potatoes for a buttery texture. Fresh garlic enhances flavor. Add a cornstarch slurry at the end if you want a thicker sauce. Can be prepped ahead and stored in fridge overnight before cooking. Easily doubled for families.
