Method
- Season chicken with salt and pepper.
- Place chicken, cubed potatoes, and baby carrots into the crockpot.
- Whisk together heavy cream, chicken broth, Parmesan, garlic, and Italian seasoning. Pour over chicken and vegetables.
- Cover and cook on Low for 6–7 hours or High for 3–4 hours, until chicken reaches 165°F and is tender.
- Gently stir the sauce. Garnish with parsley and extra Parmesan before serving.
Notes
Use Yukon Gold potatoes for a buttery texture. Fresh garlic enhances flavor. Add a cornstarch slurry at the end if you want a thicker sauce. Can be prepped ahead and stored in fridge overnight before cooking. Easily doubled for families.
