Method
- Preheat oven to 400°F (200°C).
- Mix lemon zest, lemon juice, minced garlic, and olive oil in a small bowl.
- Place salmon fillets on a baking sheet lined with parchment. Season with salt and pepper. Coat with lemon garlic mixture.
- Bake for 12–15 minutes or until salmon flakes easily with a fork.
- Serve warm with cooked quinoa and spinach.
Notes
Feel free to swap quinoa with cauliflower rice or another whole grain. This dish also pairs well with roasted vegetables.
