  • 2 lemons Lemon zest from fresh lemons, avoiding the bitter white pith. Use fresh lemon zest for the best flavor.
  • 2 tablespoons Ground black pepper Freshly cracked black pepper works best.
  • 1 tablespoon Fine sea salt Fine salt balances the flavors.

Method
 

Making the Lemon Pepper Seasoning
  1. Preheat the oven to 200°F (90°C).
  2. Spread the lemon zest on a baking sheet and bake it for 20-30 minutes or until fully dried.
  3. Remove the dried zest from the oven and let it cool.
  4. In a spice blender or mortar and pestle, combine the dried lemon zest, ground black pepper, and fine sea salt.
  5. Grind the mixture to combine well.
  6. Store the lemon pepper seasoning in an airtight container.

Notes

Store in a cool, dark place. The seasoning can last up to six months. Consider making smaller batches for the freshest taste.
