  • 1 cup lentils Rinse before cooking to remove debris.
  • 2 medium potatoes, diced
  • 1 medium onion, chopped
  • 2 medium carrots, sliced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil For cooking
  • Fresh parsley for garnish (optional)

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, and sauté until softened.
  2. Add carrots and potatoes, cooking for another 5 minutes.
  3. Stir in the lentils, cumin, salt, and pepper.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce heat and let it simmer for about 30 minutes, until lentils and potatoes are tender.
  6. Adjust seasoning as needed, and serve hot, garnished with fresh parsley if desired.

Notes

Store any leftover soup in an airtight container in the refrigerator for up to 4 days. For longer storage, you can freeze the soup in freezer-safe containers for up to 3 months. Just make sure to cool it completely before freezing. Adding a squeeze of lemon juice just before serving can enhance the flavor.
