- Dice the mango, avocado, red capsicum, red onions, and cucumber into small pieces.
- In a large bowl, combine all the diced ingredients.
- Chop the coriander/cilantro and add it to the bowl.
- Squeeze the lime juice over the mixture.
- Drizzle with olive oil and sprinkle with salt and red chilli flakes.
- Toss gently to combine and serve immediately.
Notes
This salad is best enjoyed fresh but can be stored for up to a day in the refrigerator. Avoid freezing, as the texture will change, especially with the avocados.
