Ingredients
  

Fresh Ingredients
  • 1 cup Mango, diced Make sure it's ripe but firm.
  • 1 cup Avocado, diced Choose ripe but firm avocados.
  • 1 cup Red capsicum peppers, diced Can substitute with any color bell peppers.
  • 0.5 cup Red onions, diced
  • 1 cup Cucumber, diced
  • 0.25 cup Coriander/cilantro, chopped
Dressing
  • 1 tablespoon Lime juice Freshly squeezed.
  • 1 tablespoon Olive oil
  • to taste Salt
  • to taste Red chilli flakes For added heat.

Method
 

Preparation
  1. Dice the mango, avocado, red capsicum, red onions, and cucumber into small pieces.
  2. In a large bowl, combine all the diced ingredients.
  3. Chop the coriander/cilantro and add it to the bowl.
  4. Squeeze the lime juice over the mixture.
  5. Drizzle with olive oil and sprinkle with salt and red chilli flakes.
  6. Toss gently to combine and serve immediately.

Notes

This salad is best enjoyed fresh but can be stored for up to a day in the refrigerator. Avoid freezing, as the texture will change, especially with the avocados.
