Preparation
- Preheat the oven to 425°F (220°C).
- In a large bowl, mix together olive oil, maple syrup, Dijon mustard, salt, and pepper.
- Add the carrots to the bowl and toss until they are well coated.
- Spread the carrots on a baking sheet in a single layer.
Cooking
- Roast in the preheated oven for 20-25 minutes, or until tender and caramelized, stirring halfway through.
- Remove from the oven and garnish with fresh parsley, if desired, before serving.
Notes
Add a sprinkle of cinnamon or nutmeg for a warm, spicy kick. Cut carrot sticks evenly for uniform cooking. If desired, substitute honey for maple syrup.
