Ingredients
  

For the Carrots
  • 1 pound carrots, peeled and cut into sticks
  • 2 tablespoons olive oil
  • 2 tablespoons maple syrup Can be substituted with honey or agave syrup.
  • 1 tablespoon Dijon mustard Can be substituted with yellow mustard or whole grain mustard.
  • to taste Salt and pepper
  • for garnish Fresh parsley Optional

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, mix together olive oil, maple syrup, Dijon mustard, salt, and pepper.
  3. Add the carrots to the bowl and toss until they are well coated.
  4. Spread the carrots on a baking sheet in a single layer.
Cooking
  1. Roast in the preheated oven for 20-25 minutes, or until tender and caramelized, stirring halfway through.
  2. Remove from the oven and garnish with fresh parsley, if desired, before serving.

Notes

Add a sprinkle of cinnamon or nutmeg for a warm, spicy kick. Cut carrot sticks evenly for uniform cooking. If desired, substitute honey for maple syrup.
