Moist Sugar Free Banana Bread with Applesauce

Ingredients
  

Wet Ingredients
  • 3 medium very ripe bananas, mashed Maximum sweetness is achieved with super ripe bananas.
  • 1/2 cup unsweetened applesauce Can be substituted with other purees.
  • 1/3 cup melted unsalted butter or coconut oil Vegan butter can be used as a substitution.
  • 2 large eggs
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 3/4 cups whole wheat flour (or all-purpose flour) All-purpose flour will give a lighter texture.
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon Can add nutmeg for extra warmth.
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts or pecans (optional) Can replace with chocolate chips.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour a standard 9x5 inch loaf pan.
  2. In a large bowl, combine the mashed bananas, applesauce, melted butter or oil, eggs, and vanilla extract. Mix until just combined.
  3. In a separate medium bowl, whisk together the flour, baking soda, cinnamon, and salt.
  4. Add the dry ingredients to the wet ingredients. Mix gently with a spatula until just incorporated. Do not overmix.
  5. If you’re using nuts, fold them in gently.
  6. Pour the batter into the prepared loaf pan.
Baking
  1. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely before slicing.

Notes

For serving, spread a little natural peanut butter on a slice for added protein, or enjoy it with a dollop of Greek yogurt. Store leftovers in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
