  • 1 lb chicken breast, diced Feel free to swap for tofu or shrimp.
  • 1 cup pineapple chunks, fresh or canned
  • 2 cups cooked rice Leftover rice works great!
  • 1 piece bell pepper, chopped Any color you like.
  • 1 piece onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce Can use gluten-free tamari if needed.
  • 1 tablespoon olive oil
  • to taste Salt and pepper
  • for garnish Green onions Chopped.

Method
 

Cooking
  1. In a large skillet over medium heat, warm the olive oil.
  2. Add the diced chicken to the skillet, seasoned with salt and pepper. Cook until the chicken is golden brown and cooked through, around 5-7 minutes.
  3. Toss in the chopped onion, bell pepper, and minced garlic. Sauté until the vegetables are tender—about 3-4 minutes.
  4. Stir in the pineapple chunks and soy sauce, letting it simmer for a couple of minutes to meld the flavors together.
  5. Finally, add the cooked rice to the skillet, mixing everything until well combined and heated through. Adjust seasonings as needed.

Notes

Serve warm, garnished with chopped green onions. Pairs well with a simple side salad or steamed veggies. A splash of lime juice before serving adds brightness.
