Preparation
- Preheat the oven to 400°F (200°C).
- Roll out the puff pastry and cut it into rectangles.
- Place the pastry on a baking sheet, brush with egg wash, and bake until golden and puffed, about 15-20 minutes.
Assembly
- While the pastry cools, whip the heavy cream with powdered sugar and vanilla until stiff peaks form.
- Once the pastry is cool, slice it in half horizontally.
- Fill the bottom half with whipped cream, layer with fresh raspberries, and replace the top.
- Dust with powdered sugar and serve.
