Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour Can substitute with gluten-free flour.
  • 1/2 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, softened Make sure it's softened, not melted.
  • 1 cup granulated sugar Can replace with coconut sugar.
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 tablespoon red food coloring
  • 1 teaspoon vanilla extract
For Coating
  • 1 cup powdered sugar For rolling the cookies.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  3. In another bowl, cream together the butter, granulated sugar, and brown sugar until fluffy.
  4. Beat in the eggs, red food coloring, and vanilla until the mixture is well combined.
  5. Gradually add the dry ingredients to the wet mixture until just combined. Do not overmix.
  6. Chill the dough in the refrigerator for about 30 minutes.
Baking
  1. Scoop tablespoons of the dough and roll them into balls, then roll in powdered sugar to coat.
  2. Place them on the prepared baking sheet, spacing them about 2 inches apart.
  3. Bake for 10-12 minutes until the edges are set, but the centers remain soft.
  4. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Store leftover cookies in an airtight container at room temperature for up to a week. Freeze baked cookies for up to three months.
