Preparation
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, cocoa powder, baking powder, and salt.
- In another bowl, cream together the butter, granulated sugar, and brown sugar until fluffy.
- Beat in the eggs, red food coloring, and vanilla until the mixture is well combined.
- Gradually add the dry ingredients to the wet mixture until just combined. Do not overmix.
- Chill the dough in the refrigerator for about 30 minutes.
Baking
- Scoop tablespoons of the dough and roll them into balls, then roll in powdered sugar to coat.
- Place them on the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes until the edges are set, but the centers remain soft.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Store leftover cookies in an airtight container at room temperature for up to a week. Freeze baked cookies for up to three months.
