Ingredients
  

Seafood

  • 1 cup cooked shrimp
  • 1 cup crab meat
  • 1 cup scallops seared

Vegetables

  • 2 cups romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber sliced
  • 1/4 cup red onion thinly sliced

Dressing

  • 3 tbsp olive oil
  • 2 tbsp lemon juice freshly squeezed
  • 1 tsp Dijon mustard
  • 1 tsp fresh dill chopped
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste

Instructions
 

  • Prepare the seafood by cooking shrimp and searing scallops. Let them cool before chopping.
  • Chop the lettuce, halve the cherry tomatoes, slice the cucumber, and thinly slice the red onion.
  • In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, fresh dill, salt, and black pepper.
  • In a large mixing bowl, combine the seafood, vegetables, and dressing. Toss gently to coat everything evenly.
  • Refrigerate the salad for 15 minutes before serving to enhance the flavors.

Notes

For an extra flavor boost, add avocado, feta cheese, or grilled corn. Pair with a crisp white wine or sparkling water.
