  • 1 pound cooked shrimp peeled and deveined
  • 1 pound scallops cooked and chilled
  • 1 can tuna preferably packed in water
Vegetables
  • 2 cups mixed greens for the base of the salad
  • 1 cup cherry tomatoes halved
  • 1 cup cucumbers sliced
  • 1/2 cup red onion thinly sliced
Dressing
  • 1 tablespoon Dijon mustard
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice freshly squeezed
  • 1 tablespoon fresh herbs such as dill or parsley

Preparation
  1. Cook the seafood as required: boil the shrimp until pink, sear the scallops, or grill the tuna steaks.
  2. Allow the seafood to cool slightly and then chop them into bite-sized pieces.
  3. Chop the vegetables uniformly for an even distribution of flavors.
Assembly
  1. In a large bowl, combine the seafood, mixed greens, chopped vegetables, and gently toss them together.
  2. Prepare the dressing by whisking together Dijon mustard, olive oil, lemon juice, and fresh herbs in a small bowl.
  3. Drizzle the dressing over the salad and toss lightly to ensure all ingredients are evenly coated.
  4. Refrigerate the salad for about 15 minutes before serving.
