Preparation
- Heat the oil in a large skillet over medium heat. Add the chopped red onion and green bell pepper and sauté until softened, about 4 to 5 minutes.
- Add the ground turkey and cook, breaking it up, until no pink remains and small browned bits form, about 6 to 8 minutes. Season lightly with salt and pepper while cooking.
- Stir in the tomato paste and minced garlic and cook 1 minute more to deepen the flavor.
Cooking
- Transfer the turkey mixture to the slow cooker. Add the chopped tomatoes, both rinsed cans of beans, chicken broth, chili powder, cumin, and oregano. Stir to combine.
- Cook on low for 6 to 8 hours or on high for 3 to 4 hours.
- About 15 minutes before serving, taste and adjust salt and pepper. If the chili is too thin, leave the lid off for the last 20 minutes to reduce, or mash some beans to thicken.
Serving
- Serve hot with shredded cheddar and sliced green onions, and offer additional toppings like sour cream, avocado, or tortilla chips.
Notes
Browning the turkey and sautéing the veggies is worth the extra 10 minutes for deeper flavor. All ingredients are gluten-free, but check canned goods for hidden gluten if needed.
