  • 2 pieces Grilled chicken breasts Marinate in lime juice and cumin for extra flavor.
  • 1 can Black beans Rinsed and drained.
  • 1 cup Sweet corn Can use canned or frozen corn.
  • 4 cups Romaine lettuce Chopped.
  • 1 medium Avocado Diced.
  • 1 cup Cherry tomatoes Halved.
  • 1/2 cup Chipotle-lime dressing Store-bought or homemade.

Method
 

Preparation
  1. Grill the chicken until fully cooked and slice it into strips.
  2. In a large bowl, combine the black beans, sweet corn, chopped romaine, diced avocado, and halved cherry tomatoes.
  3. Add the grilled chicken to the bowl.
  4. Drizzle with chipotle-lime dressing and gently toss everything to combine.
  5. Serve immediately or store in the fridge for meal prep.

Notes

Be sure not to overcook the chicken on the grill to keep it juicy and tender. Store leftovers in an airtight container in the fridge for up to 3 days.
