Ingredients
  

For the Cake
  • 2 cups all-purpose flour Whole wheat flour can be used as a substitute.
  • 2 cups granulated sugar For a healthier option, consider substituting a portion with honey or maple syrup.
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs Make sure they are at room temperature.
  • 1 cup whole milk Let come to room temperature for better mixing.
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
For the Strawberry Filling
  • 1 cup homemade strawberry jam
  • 2 cups fresh strawberries, sliced
For the Frosting
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar For a less sweet frosting, reduce the amount.
  • 1 teaspoon vanilla extract (for frosting)
  • 1/4 cup fresh strawberries, pureed (for frosting)

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
  2. In a large bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, milk, vegetable oil, and vanilla extract. Beat on medium speed for 2 minutes, then stir in the boiling water until well mixed.
  4. Divide the batter evenly among the prepared cake pans.
Baking
  1. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  2. Allow the cakes to cool in the pans for 10 minutes, then transfer them to wire racks to cool completely.
Assembly
  1. Once cooled, spread a layer of strawberry jam on top of one cake layer, then add some sliced strawberries.
  2. Place the second cake layer on top and repeat the process.
  3. For the frosting, beat together the softened cream cheese and butter until smooth.
  4. Gradually add the powdered sugar, then mix in the vanilla extract and pureed strawberries until well combined.
  5. Frost the top and sides of the assembled cake. Decorate with additional fresh strawberries as desired.
  6. Finally, slice it up, serve, and enjoy!

Notes

This cake can be served with vanilla ice cream or whipped cream. To keep the cake fresh, store in an airtight container.
