Ingredients

For the Marinade
  • 1/4 cup sweet chili sauce Use a Thai-style sweet chili for classic sweet-heat balance.
  • 2 tablespoons soy sauce Low-sodium soy sauce can be used or substitute with tamari for gluten-free.
  • 1 tablespoon olive oil For marinating.
  • 1 teaspoon garlic powder Fresh garlic can be substituted (1 clove for every teaspoon).
  • 1 teaspoon ginger powder Fresh ginger can be used (1/2 teaspoon for every teaspoon of powder).
  • Salt and pepper to taste Season lightly as soy sauce adds sodium.
For the Chicken
  • 4 pieces chicken thighs Bone-in, skin-on gives the best flavor. Boneless skinless thighs require shorter cooking time.
  • Chopped green onions for garnish Fresh garnish before serving.

Method

Preparation
  1. In a bowl, mix the sweet chili sauce, soy sauce, olive oil, garlic powder, ginger powder, salt, and pepper.
  2. Whisk until smooth and adjust seasoning as needed.
Marinating
  1. Marinate the chicken thighs in the mixture for at least 15 minutes; up to 2 hours for deeper flavor.
Cooking
  1. Preheat the air fryer to 380°F (193°C) for crispy skin.
  2. Place the marinated chicken thighs in the air fryer basket, ensuring they're in a single layer.
  3. Cook for 18-20 minutes, flipping halfway through, until chicken is cooked through with a nice glaze.
Serving
  1. Garnish with chopped green onions before serving and let rest for 3 to 5 minutes.
