Sweet Potato Cinnamon Bread

Ingredients
  

Main Ingredients
  • 2 cups mashed sweet potatoes Cook and mash sweet potatoes before measuring.
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup butter, softened Use unsalted butter for better flavor control.
  • 1/2 cup milk
  • 3 pieces eggs Can be substituted with applesauce or yogurt.
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup brown sugar For the topping.
  • 1 tablespoon cinnamon (for topping)

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, combine the mashed sweet potatoes, softened butter, and sugar. Mix well.
  3. Add the eggs and milk, mixing until well combined.
  4. In another bowl, whisk together the flour, baking powder, baking soda, spices, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Pour the batter into the prepared loaf pan.
  7. In a small bowl, mix together brown sugar and cinnamon. Sprinkle this topping over the batter.
Baking
  1. Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
  2. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Store the bread in an airtight container at room temperature for up to 3 days, or refrigerate for about a week. It can also be frozen for up to 3 months. Make sure to mash your sweet potatoes well to avoid lumps in the batter. For extra moist bread, consider increasing the amount of butter or milk slightly.
