Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Rub olive oil all over the chicken breasts, then season generously with salt and pepper.
  3. In a skillet over medium-high heat, sear the chicken until golden brown on both sides—about 5 minutes per side.
  4. Stir in the minced garlic and let it cook for about 30 seconds until fragrant.
  5. Pour in the chicken broth and allow it to simmer while scraping any delicious bits from the pan.
  6. Stir in sour cream until everything is well combined, letting the mixture bubble for about 5 minutes.
  7. Top each chicken breast with shredded Jack cheese, then transfer the skillet to the oven.
  8. Bake for around 15 minutes or until your cheese is melted and bubbly.
  9. Garnish with chopped green onions and a sprinkle of paprika before serving.

Notes

Store any uneaten chicken in an airtight container in the refrigerator for up to 3 days. This dish freezes well too; let it cool completely before transferring to freezer-friendly containers.
