- Preheat and Prepare: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper and set aside.
- Mix the Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
- Cream the Butter and Sugar: In a large bowl, cream the softened butter and sugar until light and fluffy (2–3 minutes). Add the egg, vanilla, and almond extract (if using) and beat until fully combined.
- Combine and Chill: Slowly mix the dry ingredients into the wet ingredients until a soft dough forms. Cover and chill in the fridge for 30 minutes to prevent spreading.
- Shape and Bake: Scoop dough into 1-inch balls, roll in sugar or sprinkles if desired. Place on baking sheets, 2 inches apart. Bake for 8–10 minutes, just until edges are lightly golden. Cool 5 minutes on the sheet, then transfer to a wire rack.
Notes
Chilling the dough is key for soft, thick cookies. Almond extract adds festive flavor but can be skipped. Use a cookie scoop for even sizing. Slightly underbake for softer centers.
