  • 1 pound breakfast sausage Use good-quality sausage for best flavor.
  • 30 oz frozen hash browns You can also use fresh hash browns, just ensure they are cooked.
  • 8 large eggs
  • 1 cup milk
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese Can substitute with pepper jack or other cheese.
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped green onions Used for topping before serving.

Preparation
  1. In a skillet over medium heat, cook the sausage until browned. Set aside to cool.
  2. In a large bowl, whisk together eggs, milk, sour cream, salt, and pepper until smooth and well combined.
  3. Grease a 9x13-inch baking dish. Layer half of the hash browns on the bottom, followed by half of the sausage, and a layer of the cheddar cheese.
  4. Repeat the layering process with the remaining hash browns, sausage, and cheese.
  5. Pour the egg mixture evenly over the layered ingredients.
  6. Cover with foil and refrigerate overnight.
Cooking
  1. Preheat your oven to 350°F.
  2. Bake the casserole, covered, for 45 minutes.
  3. Remove the foil and bake for an additional 20–25 minutes, or until golden and fully set.
  4. Top with chopped green onions before serving warm.

Notes

If you have leftovers, they can be stored in the fridge for 3–4 days. Casserole can be frozen before baking for up to two months. Thaw overnight in the fridge before baking.
