Preparation
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the onion and garlic, sauté until soft.
- Add zucchini and mushrooms, cooking until tender. Stir in spinach until wilted. Season with salt, pepper, and Italian seasoning.
Assembly
- In a baking dish, spread a layer of marinara sauce, followed by a layer of noodles, ricotta cheese, vegetable mixture, and mozzarella cheese.
- Repeat the layers until all ingredients are used, finishing with a layer of noodles and sauce topped with mozzarella and Parmesan cheese.
Baking
- Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes or until cheese is bubbly.
- Let cool for a few minutes before slicing and serving.
Notes
For leftovers, store in an airtight container in the fridge for up to 3 days. Reheat slices in the microwave or warm in the oven at 350°F (175°C) until heated through. Can freeze tightly wrapped for later.
