  • 1 cup pineapple juice Use 100% pure juice, not from concentrate.
  • ½ cup coconut cream The thicker cream gives the drink a velvety texture.
  • cups crushed ice Can substitute with frozen pineapple chunks if ice is not available.
  • 1 tsp honey or agave Optional sweetener to balance tartness if desired.

Preparation
  1. Chill your glasses by placing them in the freezer for 10 minutes.
  2. In a blender, combine pineapple juice, coconut cream, crushed ice, and honey.
  3. Blend starting at a low speed, then increase to high for 30 seconds until smooth and creamy.
  4. Taste the mixture; if too thick, add a splash of juice; if too sweet, squeeze in some lime.
  5. Pour the blend into your chilled glasses and garnish with a pineapple wedge.

Notes

Rim the glass with coconut sugar or Tajín for added flavor. Pair with grilled shrimp skewers or mango salsa for a perfect snack.
