White Chicken Chili

Main Ingredients
  • 2 cups cooked chicken, shredded Can use leftovers or rotisserie chicken.
  • 1 can white beans, drained and rinsed Cannellini or Great Northern beans both work.
  • 1 can corn, drained
  • 1 large onion, diced
  • 3 cloves garlic, minced Can use pre-minced garlic for convenience.
  • 2 cups chicken broth Ensure it's gluten-free if needed.
  • 1 cup Greek yogurt Can substitute with sour cream.
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • to taste Salt and pepper Adjust according to preference.
  • to taste Fresh cilantro, for garnish

Method
 

Cooking Instructions
  1. Heat 1 tablespoon of oil in a large pot over medium heat.
  2. Add diced onion and cook for 4 to 5 minutes until translucent.
  3. Add minced garlic and cook for 30 seconds until fragrant.
  4. Stir in cumin and chili powder and toast for 30 seconds to bloom the spices.
  5. Add drained white beans, drained corn, and chicken broth. Bring to a gentle simmer.
  6. Add shredded chicken and simmer for 5 minutes to warm through and let flavors meld.
  7. Remove pot from heat and stir in Greek yogurt until smooth. Taste and season with salt and pepper.
  8. Garnish with chopped fresh cilantro and serve.

Notes

For a slightly thicker chili, mash a few beans against the side of the pot before stirring. To avoid curdling, remove the pot from the burner before adding yogurt.
