- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, and bell pepper. Cook about 5 minutes until softened.

- Add black beans, diced tomatoes with juice, broth, and bay leaf. Stir well.
- Reduce heat and simmer for 20 minutes.

Notes
For smoky depth, add a chipotle pepper in adobo sauce. To make it heartier, stir in cooked rice or quinoa. For creaminess, blend half the stew. Vegan-friendly if you skip dairy toppings.
