Ingredients
  

Stew Base
  • 2 tbsp olive oil
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 red bell pepper diced
  • 2 cans black beans 15 oz each, rinsed and drained
  • 1 can diced tomatoes 28 oz, with juice
  • 4 cups vegetable broth
Seasonings & Spices
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 0.5 tsp chili powder more for heat
  • 1 bay leaf
  • salt and black pepper to taste
Halloween Flair (Optional Toppings)
  • sour cream dollops shaped like ghosts
  • sliced olives for eyes
  • shredded cheddar cheese for witch’s hair
  • fresh cilantro for garnish

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, and bell pepper. Cook about 5 minutes until softened.
  3. Stir in smoked paprika, cumin, and chili powder. Toast spices for 1 minute.
  4. Add black beans, diced tomatoes with juice, broth, and bay leaf. Stir well.
  5. Reduce heat and simmer for 20 minutes.
  6. Remove bay leaf. Season with salt and pepper.
  7. Top bowls with sour cream ghosts, olive eyes, cheese, and cilantro for spooky flair.

Notes

For smoky depth, add a chipotle pepper in adobo sauce. To make it heartier, stir in cooked rice or quinoa. For creaminess, blend half the stew. Vegan-friendly if you skip dairy toppings.
