- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until soft, about 5 minutes.
- Stir in the minced garlic and cook for another minute.
- Add the ground beef to the pot, breaking it up with a wooden spoon. Cook until browned.
- Stir in the chili powder, cumin, salt, and pepper to combine all those lovely spices.
- Add the diced tomatoes, kidney beans, black beans, and beef broth. Bring to a boil.
- Reduce heat and let simmer for 20 minutes, stirring occasionally to meld the flavors.
- Adjust seasoning to taste and serve hot.

Take your time with that simmer—this is where the flavors truly develop! Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months. For spice, add diced jalapeños during cooking.
