  • 1 pound ground beef
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (28 ounces) diced tomatoes
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • to taste salt and pepper
  • 2 cups beef broth Use low-sodium if preferred
  • 1 tablespoon olive oil

Method
 

Cooking
  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until soft, about 5 minutes.
  2. Stir in the minced garlic and cook for another minute.
  3. Add the ground beef to the pot, breaking it up with a wooden spoon. Cook until browned.
  4. Stir in the chili powder, cumin, salt, and pepper to combine all those lovely spices.
  5. Add the diced tomatoes, kidney beans, black beans, and beef broth. Bring to a boil.
  6. Reduce heat and let simmer for 20 minutes, stirring occasionally to meld the flavors.
  7. Adjust seasoning to taste and serve hot.

Notes

Take your time with that simmer—this is where the flavors truly develop! Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months. For spice, add diced jalapeños during cooking.
